Ingredients:

  • 10 large eggs at room temperature
  • 1/2 cup plain full-fat Greek yogurt at room temperature
  • 3/4 cup shredded Gruyere cheese (or substitute with Emmental or Swiss cheese)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup crumbled bacon (about 6 slices, cooked and crumbled)

Instructions:

  1. Preparation: Preheat your oven to 325 degrees Fahrenheit and spray a non-stick muffin pan with cooking spray.
  2. Mixing: In a mixing bowl, combine the eggs, Greek yogurt, salt, and pepper. Use a hand-held immersion blender until the mixture is smooth. If you don’t have an immersion blender, a regular blender works fine too.
  3. Add-ins: Stir in the shredded cheese and crumbled bacon by hand. Save a tablespoon of bacon for topping later.
  4. Fill the Pan: Pour the egg mixture into the prepared muffin tin, dividing it evenly between the 12 muffin cups.
  5. Top it Off: Sprinkle the remaining bacon on top of each egg bite.
  6. Baking: Bake at 325 degrees Fahrenheit for about 15-17 minutes. The egg bites are ready when the centers almost stop jiggling when you gently shake the pan.
  7. Cooling: Let the egg bites cool completely in the pan before removing them. Once cooled, store them in an airtight container in the fridge.

Notes:

  • Oven Variation: Since ovens can vary in temperature, it’s a good idea to check yours. Adjust the baking time accordingly based on your oven’s temperature and the size of your eggs.
  • Storage: Keep the egg bites in an airtight container in the fridge for up to four days after baking.

Tips for Reheating:

  • Microwave Method: When reheating from the fridge, use the microwave at 90% power for 45 seconds to one minute until heated through.

Freezing Instructions:

  • Prevent Sticking: To freeze, separate the egg bites with parchment paper to prevent them from sticking together.
  • Storage Time: Frozen egg bites can be stored in an airtight container for up to three months.
  • Reheating from Frozen: Microwave the frozen egg bites for about 1 minute and 30 seconds on 75% power until heated through.

With these easy steps, you can enjoy delicious homemade egg bites anytime, whether you’re rushing out the door in the morning or needing a quick snack during the day. Experiment with different ingredients like vegetables or different types of cheese to customize your egg bites to your liking!
