  • 1/3 cup crumbled bacon (about 6 slices, cooked and crumbled)

Instructions:

  1. Preparation: Preheat your oven to 325 degrees Fahrenheit and spray a non-stick muffin pan with cooking spray.
  2. Mixing: In a mixing bowl, combine the eggs, Greek yogurt, salt, and pepper. Use a hand-held immersion blender until the mixture is smooth. If you don’t have an immersion blender, a regular blender works fine too.
  3. Add-ins: Stir in the shredded cheese and crumbled bacon by hand. Save a tablespoon of bacon for topping later.
  4. Fill the Pan: Pour the egg mixture into the prepared muffin tin, dividing it evenly between the 12 muffin cups.
