DIY Starbucks Inspired Feta Wraps & How To Freeze

I love Starbucks Spinach Feta Egg White Wraps, but I don’t like the price tag. Here’s a secret: you can make your own at home and freeze them for quick breakfasts anytime! Let’s learn how to whip up these tasty wraps.

Ingredients:

  • 6 whole grain tortillas (10-inch minimum)
  • 10 cups fresh spinach
  • Sprinkle of garlic salt
  • 1/3 jar roasted red peppers
  • 3/4 cup whipped cream cheese
  • 2 cups liquid egg whites
  • 3/4 cup crumbled feta
  • 6 tbsp sun-dried tomatoes
  • Avocado oil cooking spray
  • Saran wrap

Instructions:

  1. Prep the Tortillas: Remove the tortillas from the fridge for 15 minutes or microwave them for 10 seconds each to prevent breakage when rolling.
  2. Cook the Spinach: In a greased nonstick pan over medium heat, sauté the fresh spinach with a sprinkle of garlic salt until wilted.
  3. Make the Omelets: In a small skillet sprayed with cooking spray, cook 1/3 cup of liquid egg whites at a time to make thin omelets. Repeat this process six times.
  4. Assemble the Wraps: Spread two tablespoons of whipped cream cheese on each tortilla. In the center of each tortilla, layer 1/6 of the sautéed spinach, one tablespoon of chopped roasted red peppers, one mini egg white omelet, two tablespoons of crumbled feta cheese, and one tablespoon of sun-dried tomatoes. Pro tip: Place the omelet in the center, add all the other ingredients, then fold it before rolling the burrito.
  5. Wrap and Store: Roll up each burrito and wrap it in parchment paper. Refrigerate them for up to three days.

Reheating Options:

  1. Serving From Frozen: When you’re ready to eat, microwave the frozen burrito wrapped in a paper towel for 2-4 minutes or until heated. Flip the burrito halfway through cooking, even to heat it. You can also brown it in a skillet for added crunch, although once frozen, the burritos tend to stick together nicely and may not need additional browning unless desired.
  2. Immediate Consumption: If you’re ready to enjoy your wraps right away, you can crisp them up in a pan before serving. Heat a skillet over medium-high heat, spray with cooking oil, and cook the burrito until golden brown on each side (about 1-2 minutes per side).
  3. Freezing Tips: To prevent excess moisture, ensure all ingredients are cool before rolling the burritos. Roll up the burrito directly on parchment paper and then wrap the parchment paper around it. Date and place the wrapped burritos in the freezer immediately.
